More pickled eggs

I came upon this super simple recipe for pickled eggs on the net.
Hard boil and peel a dozen eggs.
Make a brine of:
1cup vinegar
1/2 cup water
2 Tablespoonfuls of coarse salt
2 tablespoonfuls of mixed pickling spice
1 onion, sliced into rings or half rings

Put all brine ingredients into a stainless steel or ceramic pot and bring to a boil for a couple of minutes. Put peeled hard boiled eggs into a quart jar or glass bowl and pour the hot brine, with the pickling spice and onions over the eggs to cover. Cool and refrigerate for at least 3 days before using. I find a dozen large eggs and the brine/onion mix fills a quart canning jar to the brim. Both the eggs and the onions used in the marinade taste great.

Eggs are on sale this week at Foodland too. $2.29 for a dozen so I think I will make some of your pickled eggs, Dave. Perfect timing.

Lulu, BBQ and Molly also have pickled egg recipes posted up in the Recipes section. I added half a dozen sliced garlic cloves to the brine in the second batch of pickled eggs I made. Have a read through the other pickled egg recipes too and pick the one that grabs your fancy.

I'm going to have a go at these in the next couple of days!

I pickled beets today. Only 2 1/2 jars and need to make more. We like pickled beets! :D
