Sharon Bryson’s Chipotle Chicken Pizza with Caramelized Onions

Prepare pizza dough using dough cycle in Bread Machine.

Grease a 10X15” cookie sheet.

Turn risen dough out and knead a few times, let rest a few minutes, then pat out to fit baking sheet forming a slight edge. Let rise in a warm place 15-20minutes, until puffy.

Preheat oven to 350-375F.

Brush risen crust with a bit of juice from salsa mixed with a Tbs. of olive oil using the back of a spoon….just to give a slight coating (doesn’t have to be even )

Bake for about 7-8 minutes, just until set a bit, but not brown. Remove from oven. Add toppings immediately or set crust aside
Prepare caramelized onions:

Slice 2 quite large onions

Melt ~1Tbs. Butter in skillet on med-high.

Add sliced onions and cook stirring occasionally until very soft and golden (15 minutes or more). Can be prepared ahead.


Slice ~3 grilled Chicken breasts

Heat skillet:

Saute in a bit of butter 3-4 cloves of minced Garlic and about 1 Tbs. of minced canned chipotle pepper with attached sauce. Add 1-2 Tbs. Dantes Chipotle Sauce. Toss in chicken slices and stir to coat. Add ~1/2 cup chunky medium salsa.

Remove from heat.
Slice I small red pepper quite thinly, set aside

Chiffonade about 2Tbs. Fresh Sweet Basil, if available

Grate ~ 11/2 cups Mozzarella Cheese and ~1/2 cup Asiago cheese

Assemble pizza

Add chicken mixture evenly over pizza crust, top with sliced red pepper, basil and onions. Sprinkle with Mozzarella and then Asiago

Bake for about 13-15 minutes at 375F
